When honey is stored in drums or ripeners, etc., for time it crystallizes and to repackage it is necessary to heat it but never more than 45ºC so that it does not lose properties or increase the HMF.
It is also good for the honey merchant to present liquid honey, since the customer considers that good honey is liquid and not all merchants know the reason for its crystallization as a natural process.
