Lyson brand mixer and homogenizer, Classic range, for making creamed honey, made of 200 liters (280 kilos) of stainless steel, heatable with temperature regulation from 30 to 55°C. This equipment is designed to carry out the process of making creamed honey. The helical honey mixer is made of acid-resistant stainless steel. By stirring the crystallized honey with the propellers, we change its texture, achieving the desired creaminess.
Properly creamed honey has a consistency similar to butter .
About honey crystallization: Fresh honey is dense and transparent. Over time, it crystallizes naturally. The appropriate crystallization temperature is 16-18°C . At higher temperatures, the process is slower and the crystals reach larger sizes. Heating honey to 40°C and holding it there for several days causes it to change from a crystallized state (layer) to a liquid state.
Instructions for use: The creaming process must be carried out in repetitive "start-stop" cycles.
